“My love of travel, and of Iberia, started young when I would travel to Spain on family holidays,” Dom tells us. “As a kid I loved the differences, the foreignness, the desire to explore another culture. And at that age it involved making friends with the local kids, joining in crab fishing on the beach, for example. Despite not understanding the language at the time, I found I had a natural ability to assimilate, and I developed a yearning to know and experience more.

“As I got older, I became addicted to seeing other cultures and comparing them to mine. Iberia was a natural gravitation. It’s sunny, the people are great. I’m really interested in the history and the culture, and I really enjoy sharing this love with others. My love of travel grew, ultimately leading me to become a Luxury Gold Travel Concierge.”

I’ve seen many flamenco shows but this is just another level of excellence. The dancing and the musicians, they are the top of their game, literally the best artists in the world.”

Spain and Portugal – alike yet unique

“The history of Spain and Portugal differs to the rest of Europe,” Dom explains. “These distinctive cultural influences, garnered from an eclectic peopling of Iberia, mean that today they have their own way of doing things. Both countries are very European, but at the same time there’s a unique look to their architecture, their food and so forth.

“Spain and Portugal then differ from each other, through influences from their respective explorations and empires. Portuguese also sounds very different to Spanish, and the people are often a bit more reserved, particularly compared to those in southern Spain.

“A key part of my role is to bring the history to life for guests, along with guiding them through the nuances and differences. I love sharing these stories as we travel between locations.

“As you cross the border and travel into Portugal, changes are subtle, such as seeing road signs in a different language. Then once you start to travel onwards through the countryside, the Atlantic influence reveals itself in the flora and fauna.”

Iberian food culture – a perfect fit for small group travel

“On Spain & Portugal in Style we’ve got some outstanding restaurants, and many ways to enjoy food, from Michelin-starred dining to a cooking class,” Dom tells us. “Food in Iberia is such a big thing; the culture revolves around the cuisine and dining experience.

“I love how Luxury Gold guests really adopt the culinary culture of the places that we’re going to. Just like the Spanish and the Portuguese, we have long lunches and big sociable dinners.”

“L’Antic Moli in southern Catalonia is definitely one of my highlights – Michelin-starred dining and a true Spanish cultural experience,” Dom says. “On my last tour we were there for three hours. Course after course of impeccable flavors and textures, and lots of talking; no one wanted to leave!

“In contrast, when we cross over into Portugal, we stop in a very small village called Serpa – the kind of place you wouldn’t know to go to. Here  as part of the itinerary, we experienced something very different in a local restaurant: Cante Alentejano polyphonic singing. The restaurant was rustic, with wooden tables and vegetables and meats brought out in big terracotta bowls, all accompanied by this wonderful authentic music. That is also one of my favorites and the contrasts just blow me away.”

My favorite ingredients and dishes

“For me it’s all about the simple ingredients – the fresh Mediterranean salad for example is always a winner. I also recommend the tortilla (Spanish omelet) which I eat daily. In Spain you will find even the basic things are done in such a wonderful way. The Mediterranean diet is also of course very famous for its health benefits.

“My favorite Portuguese dish is a fish one, cod of course, the country’s specialty. There is a dish called ‘Bacalhau com natas’, a delicious combination of shredded cod with cream, sliced potatoes, onion and cheese, all baked in the oven, which is best washed down with vinho verde, green wine. And for dessert, the original, impeccable pastel de nata, custard tart. Yum!”

Savor seafood in Barcelona

“Both Spain and Portugal have some of the most incredible seafood in the world,” says Dom, “and a great place to indulge is Barcelona.

“I used to live in Barcelona, so I know it well, and I recommend guests head out the seaside neighborhood of Barceloneta. This old fishing village is now home to multi-million dollar yachts and some outstanding eateries.

“The 7 Portes restaurant, which is 186 years old, is the ideal place for old school Barcelona food. It is famed for its rice dishes and paellas, tapas and traditional cannelloni.

“One of my favorite seafood restaurants is called Botafumeiro which is also not far from our hotel. The dishes here include warm spider crab pie, a Botafumeiro-style Spiny-lobster and grilled Palamós shrimps.”

Indulge in Gaudi

Of course, Spain & Portugal in Style about more than food. Visiting all the top sights, the tour starts on a cultural high. “Whilst there we visit Gaudi’s iconic Barcelona masterpiece La Sagrada Familia with THE best local specialist,” says Dom. This unique modern temple has been under construction since 1882 and is not actually yet finished.

“All I can hear is guests saying, wow, wow and everyone has really sore necks because you always looking up in wonder! We also visit Park Güell up on the hill where Gaudi’s architecture meets his inspiration – nature.

“There are so many more outstanding buildings from Gaudi in Barcelona. So, with their spare time I often advise guests to visit these – the Casa Mila, the Casa Vicens and many others.

“Continuing on an art theme of recommendations for guests, Picasso grew up in Barcelona and lived very close to the previously mentioned 7 Portes Gates restaurant. The Picasso Museum houses an extensive collection and is well worth a visit.”

My hotel highlight – Evora’s Convento do Espinheiro

“Each of the hotels is fabulous, and has their own style, but the one that always amazes me the Convento do Espinheiro in Evora, Portugal,” says Dom. The stunning 15th century building and gardens was once a convent, with rooms featuring antique or 1950s-inspired furnishings.

“The cloisters and the chapel are still there, it’s quite remarkable. We have dinner in the Cellars where they used to make the wine and the olive oil. As well as the exceptional service, the uniqueness of staying in what used to be a convent is really special. You’d never think really to stay in in such a place.

Personalize your day in Madrid

In Madrid guests have the option to visit the Prado Museum with an art historian, or to take a walking tour through Madrid’s Old Town.

“For art lovers, or just those with an interest in Spain and its history this is the one to take,” says Dom. “In European terms Italy and France are famed for their museums but Spain often gets overlooked. The Prado is a world class gallery, and you can learn about the history and story of Spain from these masterpieces. There are the Royal portraits from artists such as Velazquez and Goya. There are also many international artists on display, Titian and Bosch, for example. There’s even a copy of Mona Lisa from DaVinci’s workshop. Not a lot of people know that.”

“Then those who want to be a bit more active and see kind of the backstreets of Old Madrid and some kind of little secret corners there, the way to go would be The Walking tour. This is also the perfect opportunity to get churros, a highlight of any day!”

“In fact, on this day, people can do both experiences in Madrid if they want,” Dom adds. “This is one of the many benefits of our Spain and Portugal itinerary, and of small group journeys – the flexibility to adapt to how our guests may be feeling on any given day.”

“What I’ve always loved about France is that it is just so sophisticated,” says Helen. “The French are very stylish.”

“As a culture they really take the time to learn how to prepare something. Take food for example. It takes years to become a chef, and there’s a real respect around acquiring and applying knowledge and producing something of really high quality. This can be seen in many areas, such as with wine, furniture and so on.”

Luxury is time

“There’s a different approach to time in France, which I really I really appreciate,” she tells us, adding with a smile that it can also be sometimes frustrating.

 “For me, luxury is all about time. Obviously, it’s the quality of things, but it’s also the luxury of taking the time to enjoy things. Of being able to say we can sit and try the local specialty, be that a patisserie or an aperitif, and break from a world where we’re all so busy. And Ultimate Southern France offers just that.

“We have two nights in Monte Carlo, three days in Aix-en-Provence Two nights in Carcassonne and two in Bordeaux So, the pace of the tour is elegant. We’re not running from hotel to hotel, we have this chance to relax and go a little bit deeper.”

The rural pleasure of southern France

“Often people’s first point of arrival in France would be Paris, the City of Light. Big and beautiful, it’s also big and busy,” says Helen. “The South of France is a haven of tranquility.

“Historically it’s a huge rural economy. So, inevitably, the pace of life is very different. Up until a few decades ago everything would have been based on the agricultural cycle. This routine is maybe not so much the case anymore, but farming and the vineyards are still an incredibly important part of the South of France.”

I love this chateau on the French Riviera

The Côte d’Azur, also known as the French Riviera, stretches from Saint-Tropez to the Italian border, and encompasses iconic cities like Nice and Cannes. This glamorous Mediterranean coastline is renowned for its azure waters and golden beaches, dotted with palm-lined promenades, luxurious yachts, and chic boutiques.

“Elegant and enchanting, there is so much to love about the Côte d’Azur,” says Helen. “My highlight on Ultimate Southern France is the Rothschild Chateau in Nice. “It’s one of the places where everybody asks, ‘what is this about?’ It is so unusual.”

Built in 1905 by Beatrice de Rothschild, the opulent Villa and gardens of Ephrussi de Rothschild is home to over 5,000 art objects. Up on the hillside, it looks out over the Côte d’Azur.

“I think it’s this thing of going to a place you might not have gone to yourself, and it is stunning. It’s such a nice surprise because nobody has any expectations.”

“The Pressoir d’Argent, Gordon Ramsay’s restaurant is located in Le Grand Hotel Bordeaux and, if you love haute cuisine, then this is an exceptional experience,” says Helen. “Reservations do need to be made around a week in advance, so this is something I talk to guests about at the start of the tour.

“A key aspect of being a Travel Concierge is about being on the front foot all the time with guests. France is my neighborhood and I know all the ways to make this tour exceptional above and beyond the planned itinerary. So, I make sure to impart this knowledge to guests and tailor recommendations to their pleasures, to ensure they can make the most of these once-in-a-lifetime opportunities.

My restaurant recommendations in Nice

Nice, the largest city on the French Riviera, is also one of the most charming. Located between the Mediterranean Sea and the famous Maritime Alps, the city offers a unique combination of urban convenience and natural beauty.

Guests on Ultimate Southern France have free time in Nice, to choose where they have lunch and dinner. With so many options, Helen is on hand to help you choose the perfect spot.

“If you really want to sit down and have a nice lunch in Nice, you’ve got the top top option, which is the Hotel Negresco,” Helen advises. “It’s restaurant Le Chantecler, with its 18th century décor, is incredibly decadent, indulgent and fun.

“And if you want something more casual then I’ll send you to the Old Town. In the lovely higgledy piggledy streets, with their gorgeous pink and peachy hues, I recommend you visit ‘Le Panier’.

“Around 100 years ago, a huge wave of Italian immigrants came from Bergamo into southern France and brought their delicious food with them. You must try the ‘socca’, it’s like a frittata but made from chickpea flour. Its great as an aperitif with a beer or glass of wine.”

“In charming Aix-en-Provence, we visit the remarkable Château La Coste, and here guests can choose between a wine tasting or an art walking tour,” Helen explains. “The Chateau La Coste is one of these surprising places where often no one has any expectations when we arrive, and it’s pretty phenomenal. There is a huge vineyard, a beautiful lake and a fascinating outdoor art gallery. Guests also have the opportunity to choose between experiences in Nice and Bordeaux.

“It’s all about personal preference, not just on where your interest lies, but also your rhythm at that point. Some guests may still be tired from their transatlantic flight for example or come from another European trip. So, I encourage people to work out what they need at that moment in time. Maybe it’s to sit down and sip fine wines, or whether you’d like to explore and learn. Indeed, on most occasions, guests can also choose to do both options, this is the beauty of our small group journeys.”

“My advice for a fabulous souvenir would be ‘les boutis,’” Helen says. “You can find some of the best examples of these elegant textiles at the market we visit when in Lourmarin.

“In the 1700s there was a strong commerce connection between the southern French city of Marseille and India, which saw the arrival of amazing fabrics. The French found the prints so beautiful they decided to begin making their own. So, when you see Provençal material, like tablecloths, serviettes or bedspreads, it’s likely that that print came India 300 years ago and has become part of a kind of cannon of prints that haven’t really changed ever since.

“Aesthetically, they’re beautiful – a timeless classic. They don’t age and still look as good today as they did say 50 years ago.

My pick of the exceptional hotels

We spend two nights here at the end of the tour so you can really relax and make the most of the amenities, and it’s perfectly placed for easy sightseeing.”

“On the first day of the tour, guests can choose to take a food walk with a local expert chef,” Viren tells us “This intimate tour gives guests a chance to explore Old Delhi on the street. You stop at different points and taste the the delicacies – it’s a fascinating and personal way to discover the history, people and culture.”

Old Delhi’s tangle of ancient streets and alleyways, filled with all kinds of shops and people is a bustling sight to behold. “Some of these outlets are more than 100 years old. To have been in business for a century speaks to the quality of the food, with recipes handed down through generations. And it’s not just about tasting. The chef also how the dishes are prepared, how the spices are mixed and answers all your questions.
