Located in the charming municipality of <\/span>Ulldecona<\/span> in Southern Catalonia <\/span>L\u2019Antic Moli<\/span><\/a> offers a calm, relaxing retreat from which to sample some of the finest traditional cuisine. Meaning \u201cThe Old Mill\u201d, L\u2019Antic Moli opened its doors in 2004. The immensely talented <\/span>Vicent Guimer\u00e0<\/span> is the chef and architect <\/span>of the restaurant, and he gained his <\/span>first <\/span>Michelin star<\/span><\/a> in 2017. The restaurant was also awarded a coveted <\/span>Michelin Green star<\/span><\/a> in 2020 for its commitment to sustainability.\u00a0<\/span>\u00a0<\/span><\/p>\n

Michelin star chef<\/span> Vincent Guimer\u00e0 <\/span>offers<\/span> a diverse menu, from the traditional recipes of his grandmother\u2019s kitchen to innovative creations using advanced culinary techniques. <\/span>One of the most innovative <\/span>M<\/span>ichelin<\/span>–<\/span>star<\/span>red<\/span> restaurants<\/span> in S<\/span>pain<\/span>, t<\/span>he ethos behind <\/span>L’Antic Mol\u00ed<\/span> is their commitment to the slow food movement. This focus <\/span>on organic products and on strong links with the local \u201cTerres de l\u201dEbre\u201d area guarantees the finest produce, whilst reducing emissions and farmers costs.<\/span>\u00a0<\/span>\u00a0<\/span><\/p>\n

Michelin-star chef: Vicent Guimer\u00e0<\/span><\/b>\u00a0<\/span>\u00a0<\/span><\/p>\n

Previously named Chef of the Year of Catalonia by Vanguardia and the Forum Gastronomique (2016) Vicent is a proud third generation chef. When asked about how he started out, he told us \u201c<\/span>I am the third generation of hospitality on my family. When I was 18 years old, I was already working with my parents and the opportunity to put myself in the head of the kitchen. That was where I started my first steps in this world.\u201d His parents were a key inspiration for his love of food and he tells us that their example of \u201chard work and perseverance\u201d is something that deeply inspired him in his career.<\/span>\u00a0<\/span><\/p>\n

On becoming a <\/span>Michelin star chef<\/span> in 2017 Vicent says \u201cI felt very motivated and nervous at the same time. It was not something what I was looking for, however I felt very grateful that we were recognized for the good work of the team. It was very exciting.\u201d<\/span>\u00a0<\/span><\/p>\n

Two spaces, one philosophy<\/span><\/b>\u00a0<\/span><\/p>\n

When asked what diners can expect, Vicent explains <\/span>\u201c<\/span>We have two spaces in the same restaurant.<\/span> In the Bistro Area we find a more traditional cuisine with a food scene that’s cutting-edge, constantly evolving, and endlessly exciting.<\/span> In the Michelin Area we offer a gastronomic experience full of emotions, combining ingredients from the territory, craftsmanship and sustainability<\/span>.\u201d <\/span>He describes the philosophy behind L\u2019Antic Moli as \u201cFamily, work, perseverance and passion.\u201d<\/span>\u00a0<\/span><\/p>\n

\u00a0<\/span>Inspired by the local surroundings<\/span><\/b>\u00a0<\/span><\/p>\n

\u201cBy promoting the circular economy of the area, we get dishes with unique designs created especially for us by local artisans\u201d says Vicent. \u201cWith food grown on site, we have our own ecological garden with biodynamic agriculture with which we are self-sufficient.\u201d<\/span>\u00a0<\/span><\/p>\n

The menu<\/span><\/b>\u00a0<\/span>\u00a0<\/span><\/p>\n

Vicent Guimer\u00e0 describes his signature food style as \u201c<\/span>Country Kitchen.\u201d Expanding on this description he says \u201cWe are inspired by the products of the area, the local artisans and the sustainability of the territory. We take advantage of ingredients that our land gives us.\u201d<\/span>\u00a0<\/span><\/p>\n

An innovative tasting menu features plates such as mussels with pickled, vermouth and olives, chicken with olives, beef heart tomato and chestnut mushrooms and Joselito ribs with parsnip, peanuts and mustard. L\u2019Antic Moli also boasts a thoughtful vegan menu, skillfully prepared by this <\/span>Michelin star chef<\/span>. Expect aromas, smells, flavors, sensations, contrasts and textures, all arranged for the most demanding palates.<\/span>\u00a0<\/span><\/p>\n

The Slow Food movement<\/span><\/b>\u00a0<\/span>\u00a0<\/span><\/p>\n

Hugely important to Vicent Guimer\u00e0 and L\u2019Antic Moli, the <\/span>Slow Food<\/span><\/a> movement is a global, grassroots organization, founded in 1989 to\u202fprevent the disappearance of local food cultures and traditions. Aiming to counteract the effects of modern life on food choices and educate about how these choices affect the world around us, Slow Food has grown into a global movement involving millions of people in over 160 countries. All are working towards ensuring that everyone has access to good, clean and fair food.\u00a0<\/span>\u00a0<\/span><\/p>\n

The movement believes that food is tied to many other aspects of life, including culture, politics, agriculture and the environment, and that through our food choices and working together, we can positively influence how food is cultivated, produced and distributed.<\/span>\u00a0<\/span><\/p>\n
